Besides the instant soft-serve style blender ice cream, any well-textured ice cream base needs some form of fat to keep from freezing rock solid. Nut butter works wonderfully as evidenced by this bowl of  Butter & More’s plain Pistachio Butter. Addition of lemon zest enhances the flavour altogether.

THANDAI APPLE BROWN RICE KHEER

After poring through various cookbooks on Holi recipes, I formulated my very own Thandai masala recipe, which is foolproof. It’s not overpowering, if used in the right amount in your Holi desserts. Here’s a no-fuss Thandai Kheer recipe using brown rice.

NOLEN GUR CARROT BEETROOT HALWA

This halwa is everything you want to make this Holi, especially if you’re worried about the calorie content. The fat used here is Olive Oil and the sweetener is Nolen Gur, which is a type of date palm jaggery from Kolkata, which I use extensively in my cooking. No sugar has been used.
